At Surco restaurant, we have designed a sophisticated menu, giving you a taste of new flavors and aromas using authentic ingredients which are part of the staples used by the native peoples: quinoa, maiz morado (purple corn), aji Amarillo (yellow chili pepper). Be charmed with our cuisine.
Ceviche is considered Peruís national dish. Along the coastal regions of the Americas, we find variety of seafood; here is where fresh raw fish is marinated in citrus juices such as lemon or lime, spiced with aji or chili peppers. Ceviche is often served with cancha (Andean corn nuts), choclo (Peruvian corn), sweet potato and salsa criolla.

Aji Amarillo (Yellow chili pepper)  Indigenous to Central and South America and the West Indies, chilies have been cultivated for thousands of years. Aji Amarillo is a very essential ingredient of the Peruvian cuisine. This chili starts off green maturing to a deep yellowish orange and brings out fruity flavors; itís mainly used in classic dishes such as papa a la huancaina, ceviches, lomo saltado, etc.
